For the past month this is all I have been cooking:

Tofu (extra firm, cut into cubes)

whatever vegetables I feel like on that particular day (peas, spinach, sometimes carrots, chopped green beans, etc)

beans (usually those red ones…forget what they’re called)

fry it all up together with a shit load of onion, and varying quantities of turmeric, cumin seed, black pepper, cayenne pepper, garam masala, garlic powder, a lil salt, some onion powder just to add even more oniony goodness, mustard seed, some “curry powder” which is mostly just turmeric and some other spices, sometimes parsley and oregano… Basically just every spice I have in different amounts each time to change up the flavor a little

Rice, usually either brown or basmati (I make a shitload at once and save it in the fridge because it takes forever to make)

FUCKING DELICIOUS and very cheap…  Rice and veggies are SUPER cheap, and tofu is only like 2 bucks at the nature’s pantry here in newburgh and around 3 bucks at adams. the spices can be a little pricey but they last a while… but more important than the price, it is
